Clear spiced liquor refers to a type of Daquan liquor represented by Fenjiu, one of the four most famous liquors in China in 1952, and is a traditional liquor with a long history in China, using sorghum as the main raw material. The output of Qingxiang Baijiu ranks second in mainland China, after the top-ranked strong spiced liquor, but compared to the strong spiced liquor, which accounts for nearly 80% of the total output of mainland China, Qingxiang Baijiu accounts for only 8% of the total output, less than 10%. The aroma of Qingxiangbaijiu is an elegant and harmonious aroma produced by ethyl acetate, ethyl lactate and succinic acid as the main fragrance substances. The characteristics of Qingxiangbaijiu are pure aroma, sweet and sour, harmonious taste, and a very sweet aftertaste. It is produced by a solid fermentation process that uses barley and peas for the production of the malt, and is steamed and boiled twice.
